Spicy Tomato Mustard Sausages on Toast

What do you do when you have just one slice of bread in your pantry and you need to make a filling 
brunch with that to see you through till the evening? You hunt for toppings frantically. Obviously your plans of making a sandwich is sealed. And you now need to overload that hapless square of bread with as much goodies as possible. You fish out the last 4 slices of sausages from your freezer, pop out your mozzarella to let it thaw for a while and look for veggies. Blow after blow! Your vegetable basket is EMPTY. So despite your earnest efforts to feed yourself something healthy, you fail miserably. As a last resort it has to boil down to the unholy triumvirate of bread, sausages and cheese.

And then this idea strikes you. Sometime back friend and fashionista Rupsa (who got engaged last week. Bless the couple!) had made this Sausages in Tomato Mustard Gravy as she and her band of friends shouted their lungs out in support of Argentina in the recently-concluded FIFA World Cup. The flavour combination extremely intriguing, you decide to try it out and load the devilishly spicy sausages on your bread, sprinkled with grated mozzarella to make it even more sinful. After all, you are having only one slice, what difference does it make? (Actually quite a lot, but'll we'll ignore that for the time being!)  

Tomato-Mustard sausage recipe inspired and partly adapted from Rupsa's Sugar and Spice

Serves: 1

Ingredients:

Bread slices, toasted: 2
Sausages, diced: 4 (I used chicken sausages thanks to the encephalitis scare)
Ginger paste: 1tsp
Garlic paste: 1 tsp
Onion paste: 2 tbsp
Green chillis, chopped: 2
Olive oil: 1 tbsp
Tomato ketchup: 2 tbsp
English mustard: 1 tsp
Mozzarella cheese, grated: 2 tbsp
Salt, to taste (I used garlic salt)
Red chilli flakes, for seasoning

Method:

1. In a non-stick pan, heat the oil and add onion, garlic and ginger paste. Saute for a couple of minutes.

2. Add the diced sausages and stir-fry for another 2-3 minutes.

3. Now add the ketchup and mustard and season with salt and red chilli flakes.

4. Layer the cooked sausages on the toasts and sprinkle generously with the cheese.

5. Heat oven to 180 degree C and bake for 8-10 minutes till the cheese melts. Deliciousness guaranteed!
