Mango Summer Salad

Writing a post everyday is painstaking. As if prepping, cooking, clicking and editing were not enough! So on days I fumble for words, or am hard-pressed for time, I'll just cut the crap and move straight to the recipe. Today is one such day. I've written about mangoes for 5 days straight, have to write about it for four more days. I never thought I'd have so much to say about a fruit that I'm pretty neutral about, or will even have so many mango-laden memories. So let me stop here and move on to this salad because you might as well want to make it for your Saturday breakfast!
This salad is a burst of flavours in your mouth. It's fresh, it's sweet, it's hot, it's crunchy, it's zingy and it's summery. Such a delightful combination of textures and flavours, this salad that I've been making for quite some time has always been a hit with my family. So rustle it up now and see what your loved ones have to say about it!
Serves: 2-3
Ingredients:

Mango, peeled and cubed: 2
Sausages, diced: 4 (chicken or pork)
Capsicum, chopped finely: 1
Spring onions, chopped finely: 1/2 cup
Onions, chopped finely: 1/2
Cheddar cheese, cubed: 25 gm
Red chillies, chopped finely: 3-4
Lettuce leaves, torn roughly: 3-4
Lime, juice: of 1 lime
Sea salt; to taste

Method:

1. Here's the deal. Throw every together in a big bowl, squeeze the juice of one lime, sprinkle some sea salt, toss to combine, and pounce!
